JOB INTERVIEW

Takuro Kitahara

IVY PLACE Manager

Takuro Kitahara

For every guest experience,
creating smiles and joy from within

It was an immediate decision when I heard 8 days off per month.
I felt that it was a company where I can continue to chase my dreams.

My connection with TYSONS & COMPANY (Henceforth: TYSONS) all began with one destined encounter. I used to work at a small dining bar in Chōfu famous for its location due to a comic. One of the regulars back then was an employee of beacon (Present: CRISTA) and he had grown to like my service and one day asked me, “Why don’t you join our company?”. I didn’t have immediate plans of changing jobs but I had randomly been browsing the TYSONS website during that time. One thing leads to another and I was able to meet with the manager at beacon right away. I started working at beacon part-time that very week!

One of the reasons why I decided on my move was the number of days off, 8 days per month (Present: 9 days per month) as this was a rare case for the restaurant industry. We also had half-day shifts as well. “Rest well, work well” is our president’s and TYSONS way of thinking. The company has a structure where career growth is possible at your own speed and I felt that it was a place where I can continue to pursue my personal dream as well. I was able to restart one of my hobbies of surfing and was able to go almost every week to the beach. Even as a manager today, my private life is fulfilling as I am still able to enter amateur surfing contests and go on surf trips with my work schedule.

To always give 120% service,
created a manual from scratch

I was most shocked regarding the level of effort everyone put into the service when I initially started working at beacon. Not just to providing what the guests request, but to go that extra step in order to give that wow factor. Providing 120% service allows every guest to have a very memorable dining experience.
After I was transferred to IVY PLACE, I became a trainer for the servers where I focused on going that extra step in order to provide that 120%. Everything that I experienced, everything that I had learned till then, there was so much I wanted to share and teach. This is why I decided to create a manual which I used at T.Y.HARBOR as an assistant manager, then came back to IVY PLACE where I was promoted to be the manager.

A wide range of characters and types of staff are working at a restaurant as big as T.Y.HARBOR. In order to successfully work as a team, one cannot just force their ideas and rules upon them. This is actually something I learned from my own staff members. I held a survey where my review as a manager was evenly split between “very good” and “I can’t stand him”. I was initially sad and bothered but my boss back then told me that my review was just right. He told me that a good leader should have both traits and reviews from his staff. This actually motivated me a lot and along with a great work environment, I was able to improve upon myself. Today, I set up a structure where all staff members can submit their ideas, concerns, or questions freely.

Fatigue is easily visible.
Creating an environment where everyone can refresh.

The first thing I worked on when I came back to IVY PLACE as a manager was recreating the work environment and atmosphere. My motto was “if you’re not enjoying your own job, how can one give joy to others”. Fatigue and stress can easily show on your face. Therefore, if the staff aren’t refreshed, I believe it’s hard for guests to enjoy their time as well.

I first went ahead and created a resting room for the staff. Not just creating one but for me to verbally announce to everyone that the room is open for anyone and anytime. In addition, I asked them to take a week paid time off, twice per year when the pleased. If their private life was fulfilling, I believe that one’s motivation towards work would rise at the same time.

I think people who choose to work at TYSONS have a strong desire to spread joy to others as well. To create an environment where they can do that is one of my jobs. Which ultimately leads to each guest having a memorable dining experience no other.
I strongly believe that TYSONS is Tokyo’s number one, or even Japan’s number one restaurant group. I hope to continue to be a leader who represents one of the brands of the group and lead the way for my staff.
